Food as Medicine Speakers on ESPN Radio
On Thursday, February 23 Chef and Dietitian, Eric Meredith, MEd, MS, RD, CHES, CPT, David W. Miller, MD, Lac, and practicing chiropractor and acupuncturist, Kristine Tohtz, DC, DABCA, MsAC, Cert. MDT, CACCP served as panelists for ResU’s Speaker Series, Thinking Out Loud: Food as Medicine II. All three guests were invited to talk on ESPN’s Beyond Sports following the event.
Kristine Tohtz spoke with Beyond Sports about the importance of listening to your body and eating a diet of raw foods, high in vegetable counts and low in protein, for the micro-nutrient health benefits. Tohtz discussed incorporating the use of Chinese medicine in diets which have proven to be proficient in the balance of body composition. In her interview, she dissects the science behind vegetarian-based diets like vegetarianism, veganism and macro-biotic diets and higher-protein diets like the Atkins plan, paleo and the Whole 30 while laying out the pros and cons of each diet.
David Miller spoke to Beyond Sports about acupuncture, Chinese medicine and nutrition in kids. Dr. Miller suggests exposing children to nutrient-depth foods consistently; this includes fruits and vegetables, whole grains, and organic and free-range meats which are strategies to early, healthy eating habits in children.
In his interview, Eric Meredith debunked the myths of fad diets. He discussed the short-term benefits and long-term effects of most diets while stressing the importance of balance as well as mindful eating.
